Summer/Autumn Salad (6 of the 9 main ingredients grown organically on the farm)

Ingredients (serves 3):

2 tins of tuna
1 salad turnip grated
1-2 beetroot grated
1 Lettuce
0.5-1kg potatoes
6 eggs quartered
100g Olives chopped
300g Cherry tomatoes halfed
(optional) 6 spring onions chopped

Dressing:
18ml olive oil
30ml balsamic vinegar
85-100 ml red wine vinegar
1.5-2 teaspoons mustard powder
1.5-2 teaspoons sugar
0.5 teaspoon salt
0.5 teaspoon pepper

Instructions:

1) prep all ingredients

2) Set salted water to boil.

3) Once boiling, add new potatoes (whole if small, if not cut into chunks) and boil for 10 minutes


4) add eggs to the water (dip them in slowly so they don't burst) and boil for another 10 min. (optional) if you would like to add green beans add them once the eggs have been boiling for 4 minutes, and boil the green beans for 6 minutes.


5) drain potatoes and eggs. let the potatoes cool while you peel the eggs and quarter them.


6) Mix all ingredients in a large bowl

7) finally add the dressing and serve!
